General Catering Planning Tips:
To make it easier for you to price and budget your event, a good starting point is to ask yourself: What would it cost at a restaurant for the food I want? A caterer usually has comparable costs to a restaurant. Both have food, labor, and overhead costs (commercial kitchen costs, insurance, etc). While that's a starting point, remember that for events at a venue, the caterer has to pay people to transport, setup, and breakdown all of the food and equipment to bring the event to you. We can walk you through the discussions about these costs once we understand your budget. If you are looking for the cheapest caterer, those are more commonly found in a business starting out, or from a caterer who can cut costs by using more breads or different food types than what we do.
To help you in your estimation, a barbecue sandwich and an inexpensive side for drop off only should be a minimum of $10/person to meet our standards of good fresh food and fairly paid labor.
The food and labor for a full service catered event typically runs $20 - 45 per person, varying with the venue equipment on site, the type of food and required accompanying serving items (chafers, tables, serving utensils, etc), the length of time required for us to be at the event, the guest count, and the food cost. Shrimp boils are typically at the lower end of full service catering if we simply do the shrimp boil for you. We will only use local shrimp so the taste is what we call spectacular.
For our Full Service Catering - under 60 people may only require 2-3 people on site for informal catering, while formal full service events (wedding receptions) for over 100 typically will require 5 - 10 people, depending on the type of food served (buffet, appetizers, etc.). Formal type events such as weddings will usually be the more expensive end of our prices. Our full service wedding pricing can be kept lower to mid range for full service by having a buffet and serving food for maybe an hour instead of the full event time, having a smaller guest count, having one or two meats (not requiring cutting on site) with maybe 3 sides and a dessert. For any event, formal or informal, the caterer will always have to ensure the food is refilled, and make sure the serving tables stay clean and trash free. If you want two types of things at your event, like a buffet AND a shrimp boil, that's usually about double the equipment and labor to do both. It will also increase the food cost.
If you want to keep the costs down, delivery only is an option you might want to consider. The basic requirement for your planning is to make sure you have people who can set up serving tables and that you have the serving items like chafers and serving utensils. You will need a team that can put the food on your tables, keep the food refilled, and make sure someone is clearing trash from the serving tables. A team will need to cleanup dishes after the event and put any leftover food away. We can provide delivery only for everything except brisket and ribs which must be cut on site, shrimp boils, and oyster roasts. There are many DIY type ways you can set up for serving your guests if you need to use this option for budgetary purposes.
